Sopapilla Cheesecake
Yet another Pinterest recipe find!
Sopapilla Cheesecake from the My Yellow Umbrella blog.
photo from My Yellow Umbrella
Super easy, super yummy -- think cream cheese cinnamon rolls, but even better.
Ingredients:
-3 cans Pillsbury butter crescent rolls
-2 (8oz) packages cream cheese (softened)
-1 cup sugar
-1 teaspoon vanilla
-1/4 cup butter (melted)
-Cinnamon & sugar
Instructions:
Unroll and spread 1 & 1/2 can crescent rolls on bottom of un-greased pan. Combine softened cream cheese, sugar, and vanilla. Spread mixture over crescent rolls. Unroll and spread remaining crescent rolls over mixture. Spread melted butter over the top and sprinkle with cinnamon and sugar. Bake at 350 degrees for 20-30 minutes.

A few suggestions and changes:
- The recipe calls for 3 calls of crescent rolls, but only 2 are necessary.
- There is a TON of cream cheese in these. I love cream cheese, but it's a bit overwhelming. I think next time I may cut the recipe down to 1 (8oz) package cream cheese, 1/2 cup of sugar and 1/2 teaspoon of vanilla. I think that would give this the prefect amount of filling.

Rummaging
Today was the annual city wide rummage sale in my town. That meant upwards of 70 rummage sales in a tiny town, so in other words, LOTS of deals!
Usually when I go, I'm not looking for anything in particular. This year was different, this year my goal was baby clothes. I can't say no to a great deal on those! And a great deal I did get.
My rummage sale haul:
There are 46 items total ranging in size from 3-6 months to 24 months. Several of them are new with tags! I know I won't need some of those sizes right off the bat, but for the price, you can't not get them.
So, how much did I spend on all those goodies?
Well, I spent a total of $28. $4 of that was on some tulip bulbs for myself, and $1 of that was for some baseball cards. So I spent a grand total of $23 on 46 baby clothing items.
Let's do some math, shall we?
23 ÷ 46 = 50¢ each
You find me those types of deals in a store! For the short time period that the clothes will be worn by the baby, I'll take 50¢ on something gently used any day over $10 for one item at Target or something.
******
In other news, I've been on a productive streak as of late. Here's what I've done:
* Finished the baby quilt
* Cleaned/Shampooed the nursery carpet
* Sanded the shelves that I want to paint white for the nursery
* Made a list by size and type of all the baby clothes I have so far so I can see what I still need
Things are starting to come together!

Stuffed Green Peppers
Now, I'm not much of a cook, so I'm usually not very adventurous. However, Stuffed Peppers are something I've always wanted to give a shot and these looked too damn good NOT too try.
Thanks to Pinterest (which you all need to be using), I have a list of recipes a mile long that I want to try eventually.
Here's the first of many: Stuffed Green Peppers from Kalyn's Kitchen
Stuffed Green Peppers with Brown Rice, Italian Sausage, and Parmesan
(Makes 4 large stuffed green peppers, recipe created by Kalyn when her market had a great sale on peppers!)
(Makes 4 large stuffed green peppers, recipe created by Kalyn when her market had a great sale on peppers!)
(picture from Kalyn's blog since my food never looks that pretty!)
1 C long-grain brown rice (I used Uncle Ben's Brown Rice, but any long-grain rice will work.)
4 large green bell peppers, bottom trimmed, cap end cut off and diced, and seeds removed
1 large onion, diced
2 tsp. + 1 tsp. olive oil
2 links turkey Sweet Italian Sausage (I used skinnless pork sausage)
1/2 tsp. ground fennel
1/2 tsp. dried Greek or Turkish oregano
1/2 cup grated Parmesan cheese
salt and fresh ground black pepper to taste
1/4 cup grated mozzarella cheese
Cook rice according to package directions, or using a rice cooker. (Rice can be cooked ahead and used in this recipe later.)
Preheat oven to 375F/190C. Trim bottom of bell peppers so they have a flat surface to stand on. Cut off a fairly generous amount of the stem end of peppers, then remove seeds. Place hollowed-out peppers in a baking dish that you've sprayed with non-stick spray or olive oil. (A dish that's close in size to the peppers will work best.)
Remove stem part from the pepper caps and trim off any white membrane, then dice pepper caps and the onion into fairly small dice. Heat 2 tsp. olive oil in a large skillet, then saute diced pepper and onion for 3-4 minutes, until they are starting to soften but aren't browned. Remove pepper-onion mixture to a bowl, add 1 tsp. more olive oil, then squeeze sausage out of the casing and cook until it's lightly browned, breaking apart with the back of the turner.
Put the onion-pepper mixture back into the pan with the sausage, add the dried spices, and saute 2-3 minutes to blend the flavors. Then add cooked rice and Parmesan cheese, season the mixture with salt and fresh ground black pepper to taste, and cook just long enough to warm, about 1-2 minutes.
Stuff the filling mixture into the hollowed-out peppers, using a spoon to press the mixture down so it's tightly packed into the pepper shell. (A few years ago I stopped pre-cooking the peppers before stuffing, and now I prefer peppers that are stuffed raw.) If you have any extra filling, you can put it in a small ramekin and bake along with the peppers. Bake peppers for 30 minutes, then remove from oven and put a generous pinch of grated mozzarella on top of each pepper. Put peppers back into the oven and bake about 10-15 minutes more, until cheese is melted and lightly browned. Serve hot.
You can freeze leftover peppers for a month or two, although the frozen peppers will be a little softer in texture (but still very tasty.) I cut them in half top-to-bottom before freezing and freeze two halves in a small baking dish with a snap-on lid.

The Kitchen: After
After a few months of construction and a messy house (well, that 2nd part is still valid... but I digress. I'm working on it...) we have a functional kitchen!
I love it and it's pretty. I may actually have to learn to cook now! There are still some finishing touches in the works, like doors and such, but that's minor in the grand scheme of things.
You wanna see? Here's some pictures!

It's come a long way, that's for sure! We have a much more functional layout now, and the counter space..... there's SO MUCH MORE!
I love how it came out, it was worth the wait. I'll post details and product information in a later post, so watch for that.
Thank you to my awesome, talented husband for all of his hard work. He did almost everything on his own and he did a great job!
Nursery Preview
It's not much right now, but we have all the pieces to put it all together.
This room was our office, and through the process of the kitchen remodel, sort of became a catch all room of sorts. The office has been relocated, and we're working on getting the rest of the little items to their new homes.
The walls were already the pale yellow you see here, but the door wall was in need of some touch-ups, so we decided that we could do an accent wall there. I picked a yellow & orange color scheme for the room, so the wall will be orange....
... but which shade of orange?
We actually painted the wall yesterday, but you won't see the final decision until I "reveal" the whole room to you. Don't you love a good teaser once in a while?? :)
I'd like to hopefully get the carpets clean next weekend. Then we can hopefully put these goodies together:
My DIY stuff is coming along nicely. The crib skirt is done, the bumper is done (minus the ties), the quilt just needs binding and the valance are 75% complete. Then I have to paint some shelves and put everything together.
We're getting closer!

Book Review: "Anyone But You"
SUMMARY from GoodReads
Jennifer Crusie's many fans will be delighted to discover (or rediscover) her wonderful debut novel. It's an exuberant, romantic, and occasionally goofy comedy, with two unlikely love stories. The first is between 40-year-old Nina, happily divorced and looking for a puppy companion, and Fred, an overweight, grumpy basset/beagle spending his last day in the shelter. It's fortunate for everyone that Nina adopts him, since Fred ends up playing unwitting Cupid, introducing Nina to ER doctor Alex Moore, her handsome 30-year-old neighbor. That's where the second love story comes in, but it's not easy. Nina rules out any man 10 years younger, but she's happy to watch old movies with Alex -- night after night after night.
MY RATING
MY THOUGHTS
I thought this book was adorable. It was a really cute story and you can't help but love Fred. It's a funny, witty romantic tale. Great for a quick read!

The "Ber" Months
It's September.
You know what that means right? We've officially entered the months that end with 'ber'.
By the last of those aforementioned months, baby N will have arrived!
Am I excited? Nervous? Scared out of my mind? Anxious?
One simple answer: You bet I am.
Today marks 100 days until my due date of December 12th. That in itself is pretty crazy to think about. I started clearing the little things out of the office today, now I'm waiting for Jamie to get home to possibly move some of the bigger stuff.
The crib arrived this week, that giant box is now hanging out where the refrigerator and stove were -- in the dining room. The dresser should arrive by this coming Wednesday I think. The only piece of furniture that we don't have yet for the nursery is the glider.
My DIY bedding is coming along. The quilt and bumper are just about done and I'll be starting on the crib skirt and valances soon.
I've also decided how I want to decorate the walls, but that will be one of the last things to get done in there. It may or may not involve this cute little guy:
I have a couple other things up my sleeve for decor as well, but you'll see those when it's all done!
On the kitchen front, as I mentioned earlier, the refrigerator and stove are no longer in the dining room! They are in their rightful places and I even got to cook a little for the first time really since May - earning me a nice blister on my wrist I might add. Ouch.
The plumbing will be done soon and after that it's all just finishing touches. Almost done! I'll have pictures this weekend - so keep an eye out for those.
